Imitation Crab Meat (Jaiba) Ceviche

Ceviche RecipeCeviche is a refreshing seafood salad that requires no cooking. It’s popular in coastal Latin American regions and the Caribbean. It’s perfect as a main course or as a side dish on hot summer days. The seafood is “cooked” or cured in citrus juice. In this recipe, we use imitation crab meat cured in lemon juice.

Ingredients:

½ lb. imitation crab meat

2 medium sized lemons, juiced

1 large tomato, diced 

¼ red onion, diced

2 Tablespoon. chopped cilantro

1 diced jalapeño pepper (optional)

Preparation:

  • In a large ceramic or glass (do not use metal or plastic) bowl, shred the crab meat.
  • Pour lemon juice and mix. Let it sit and cure while prepping other ingredients.
  • Dice and chop tomatoes, onion and cilantro. Add to crab meat and mix.
  • Season with salt and pepper to taste. Add jalapeños, if using.
  • Serve with tostadas or corn tortilla chips.
  • Best to chill overnight before serving.
