Healthy Lunch Ideas
We all need variety in our diet to keep us from hopping in the car and grabbing fast food. Bringing your own lunch can help you stay healthy and also help you save money from dining out all the time. Try one of these recipes to add variety and spice to your lunch.
Hummus Spinach Wraps
Use this basic idea and give a twist with any of your favorite fresh herbs or vegetables.
Take a store-bought wrap or low-carb tortilla, spread a thin layer of hummus and pack it with fresh cut bell pepper, baby spinach leaves and your favorite lunch meat. To keep the wrap from getting soggy, add chopped tomato and sliced avocado right before eating. Enjoy!
Lighten Up Your Chicken Salad
Use leftover rotisserie chicken and Greek yogurt instead of mayonnaise to make light chicken salad sandwiches. For an even healthier version, skip the bread!
2 cups cubed rotisserie chicken
½ cup diced red onion
½ cup diced apple
½ cup red grapes, halved
¼ cup dried cranberries
¼ cup slivered almonds
½ cup plain Greek yogurt
1 Tablespoon freshly squeezed lemon juice
½ teaspoon garlic powder
Salt and pepper
8 slices whole wheat bread
4 leaves lettuce
Combine the chicken, red onion, apple, grapes, cranberry, almonds, Greek yogurt, lemon juice, garlic powder, salt and pepper, to taste.
If serving immediately, place the lettuce and the chicken mixture on the bread and serve.
If packing ahead of time, store the chicken mixture in a container to avoid soggy bread, and build the sandwich when you are ready to eat.
Thai Turkey Lettuce Wraps
Give these healthy turkey lettuce wraps, flavored with mint and lime juice, a kick with a dash of hot sauce.
2 medium green bell peppers, seeded and chopped
1 Tablespoon vegetable oil
3 Cloves chopped garlic
1 Pound ground turkey
2 Tablespoons fish sauce
¼ cup fresh chopped cilantro
¼ cup fresh chopped mint leaves
3 Tablespoons lime juice
½ Teaspoon sugar
Butter lettuce leaves and hot sauce for serving
Heat a 12-inch skillet to medium-high heat.
Add vegetable oil and bell pepper and cook for 3 minutes.
Add garlic and cook for 30 seconds.
Add ground turkey and fish sauce and cook for 5 minutes, breaking up the meat. Cook meat to 165 degrees.
Stir in cilantro, mint leaves, lime juice and sugar.
Serve in the lettuce leaves and cups or wraps and top with hot sauce if desired.
