Red, White and Blue Parfait
After all of the appetizers, main courses and side dishes from Fourth of July barbecues, you may crave a simple and light dessert to satisfy your sweet tooth. This refreshing Red, White and Blue parfait is easy to make as well as light and cool.
PIH Health Registered Dietitian Janice Foust says, “Although holidays bring an array of food choices, try to eat in moderation because you must remember that all calories count. Try to swap out unhealthy items from recipe ingredient lists with healthier alternatives when cooking for yourself and your loved ones. For example, in the Red, White and Blue fruit parfait, we use fat-free or sugar-free whipped topping instead of full sugar or high-fat products.”
Red, White and Blue Parfait Recipe
- Ingredients: strawberries, blueberries and fat-free or sugar-free cool whip or whipped cream.
- Directions: Place a few spoonfuls of blueberries and strawberries in a cup, add ¼ cup whipped topping, and repeat this step once or twice more depending on the size of the cup. Last step, enjoy!
