Vegetarian Italian Sub Recipe

Tailgating just got healthier! This vegetarian Italian sub is loaded with fresh vegetables and bold Italian-inspired flavors for a satisfying meal everyone will enjoy.

Here’s the recipe: 

Ingredients:   

  • 1/4 cup thinly sliced red onion, separated into rings 
  • 1 14-ounce can artichoke hearts, rinsed and coarsely chopped 
  • 1 medium tomato, seeded and diced 
  • 2 tablespoons balsamic vinegar 
  • 1 tablespoon extra-virgin olive oil 
  • 1 teaspoon dried oregano 
  • 1 16- to 20-inch-long baguette, preferably whole-grain 
  • 2 slices provolone cheese, (about 2 ounces), halved 
  • 2 cups shredded romaine lettuce 
  • 1/4 cup sliced pepperoncini, (optional)  
  1. First, soak the sliced onion rings in cold water while you prepare the remaining ingredients. In a medium bowl, combine the artichoke hearts, tomato, red wine vinegar, olive oil, and oregano.  
  2. Then, cut the baguette into four equal pieces, split each one horizontally, and remove about half of the soft bread to make room for the filling.  
  3. Drain and pat the onion dry.  
  4. Layer provolone cheese on the bottom half of each baguette, then add the artichoke mixture, onions, lettuce, and pepperoncini, if desired.  
  5. Lastly, top with the remaining bread and serve.   

Quick tip: If you are taking these sandwiches to go, pack the bread and filling separately and assemble just before eating to keep the bread from getting soggy.
