Vegetarian Italian Sub Recipe
Tailgating just got healthier! This vegetarian Italian sub is loaded with fresh vegetables and bold Italian-inspired flavors for a satisfying meal everyone will enjoy.

Here’s the recipe:
- 1/4 cup thinly sliced red onion, separated into rings
- 1 14-ounce can artichoke hearts, rinsed and coarsely chopped
- 1 medium tomato, seeded and diced
- 2 tablespoons balsamic vinegar
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon dried oregano
- 1 16- to 20-inch-long baguette, preferably whole-grain
- 2 slices provolone cheese, (about 2 ounces), halved
- 2 cups shredded romaine lettuce
- 1/4 cup sliced pepperoncini, (optional)
- First, soak the sliced onion rings in cold water while you prepare the remaining ingredients. In a medium bowl, combine the artichoke hearts, tomato, red wine vinegar, olive oil, and oregano.
- Then, cut the baguette into four equal pieces, split each one horizontally, and remove about half of the soft bread to make room for the filling.
- Drain and pat the onion dry.
- Layer provolone cheese on the bottom half of each baguette, then add the artichoke mixture, onions, lettuce, and pepperoncini, if desired.
- Lastly, top with the remaining bread and serve.
Quick tip: If you are taking these sandwiches to go, pack the bread and filling separately and assemble just before eating to keep the bread from getting soggy.
