Back to school can be a stressful time for parents, guardians and/or care takers. As breakfast remains one of the most important meals of the day, sometimes it is the most forgotten meal of the day—due to rushing in the morning. Try these five fast, simple yet healthy breakfast recipes for your back-to-schooler and be on your way for drop off in no time!

Avocado Toast

A good option for those who prefer savory flavoring over sweet

Ingredients:

  • 2 slices whole-grain bread, toasted
  • 1 avocado, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon fresh lemon juice
  • Kosher salt
  • 1/8 teaspoon red pepper flakes (optional)

Preparation:

Toast bread to desired temperature. Lightly mash avocado with a fork and add it to the toasted bread. Drizzle lemon juice and oil over the toast and avocado. Lightly add salt and red pepper flakes if desired.

Almond Butter Yogurt Fruit Parfait

Perfect for a sweet tooth

Ingredients:

  • ¾ cup plain nonfat Greek yogurt
  • 2 tablespoons almond butter
  • 1 tablespoon honey
  • ¼ cup halved grapes
  • 3 strawberries, quartered
  • 2 tablespoons chopped roasted almonds

Preparation:

Lightly mix yogurt, honey and almond butter in a bowl. Begin layering the fruit, and then add the yogurt mixture. Continue the layering process by alternating between the fruit and yogurt mixture.

Fruit and Cheese

Craving something savory and sweet?

Ingredients:

  • Apple slices
  • Cheese cubes

Preparation:

Cut an apple into slices. Mix apple slices with cheese cubes.

Protein Egg Quesadilla

A great choice for those who enjoy a breakfast full of protein

Ingredients:

  • 2 egg whites
  • Whole-wheat tortilla
  • ¼ cup shredded low-fat cheese
  • Mild salsa (optional)

Preparation:

Scramble egg whites in a pan until they are fully cooked. Heat up the whole-wheat tortilla. Place the egg whites on the heated tortilla and sprinkle low-fat cheese. Add mild salsa if desired, and then roll up the tortilla.

Peanut Butter Waffle

Instead of drenching waffles with sugary syrup, try alternating with peanut butter.

Ingredients:

  • Waffle
  • Peanut butter
  • Raisins

Preparation:

Toast the waffle to desired temperature. Spread peanut butter onto the waffle, and then simply sprinkle the raisins over.
