Low Sodium Stir-Fry

Try this low sodium stir-fry recipe for a quick dinner of chopped vegetables and heart-healthy chicken breasts in a low-salt sauce in under 30 minutes. You can add any veggies you have to strips of tender chicken in a hot skillet or wok. The key to adding Asian flavor to a low sodium chicken stir fry is in the homemade stir fry sauce.  It blends unsalted chicken broth, reduced-sodium soy sauce, and fresh lime juice with garlic, ginger, and honey. Pour it over the sizzling stir fry and cook a minute or two more before serving. This is a heart healthy and diabetic-friendly recipe. 

Ingredients 

  • 1 cup chicken unsalted broth
  • 1 1/2 Tbsp fresh lime juice
  • 2 tsp reduced sodium gluten-free soy sauce
  • 2 garlic cloves, finely minced
  • 1 Tbsp finely grated fresh ginger
  • 2 tsp cornstarch
  • 1 tsp honey
  • 1 tsp freshly ground black pepper
  • 1 Tbsp olive oil
  • 2 boneless, skinless chicken breasts (4 oz each), cut into strips
  • 1 cup fresh broccoli florets
  • 1/2 large red bell pepper, cut into 1/2-inch strips
  • 1/2 large yellow bell pepper, cut into 1/2-inch slices
  • 1 medium yellow onion, sliced
  • 2 cups cooked brown rice 

How to Make Low-Sodium Stir-Fry 

Step 1: In a small mixing bowl, whisk together chicken broth, lime juice, soy sauce, garlic, ginger, cornstarch, honey, and black pepper until smooth and there are no lumps of cornstarch. Set aside. 

Step 2: In a large skillet, heat olive oil over medium-high heat until hot and shimmering. Add chicken strips and cook, stirring frequently, until browned, about 3 minutes. Add broccoli, bell peppers, and onion; sauté, stirring frequently, until onion is softened, about 3 to 4 minutes. 

Step 3: Stir in broth mixture and cook, stirring occasionally, until sauce thickens, about 3 to 4 minutes. Serve stir-fry over prepared brown rice.
